Here’s what you’ll need:
1 ½ cup | Brown Rice (cooked & cooled)
1 large handful of chopped parsley
1 red capsicum, finely chopped
4 spring onions, thinly sliced
150g dates, chopped small – raisins can be used as alternative
200g dry roasted cashews
¼ cup Olive Oil
3 Tbsp Soya Sauce
2 Tbsp Lemon Juice
3 cloves garlic, diced
Salt and pepper to taste
Method:
- Cook brown rice
- Combine rice, oil, soya sauce, lemon juice and garlic – mix.
- Add remaining ingredients
- Stir & serve
